JOHNSTOWN -- Two new restaurants to northern Colorado and a new salon have been announced for The Plaza at 2534, near the southeast corner of
U.S. 34 and Interstate 25.

Construction has started with groundbreaking on two buildings, one for the Bonefish Grill and a second that will house the Spicy Pickle and Impact, A Salon Experience, said Nick Christensen of Chrisland Inc. of Loveland. All three businesses will be open by mid-summer, Christensen said.

The Bonefish Grill is an upscale seafood restaurant founded in St. Petersburg, Fla., in 2000. It has restaurants in Westminster and Littleton. Ed Carroll will be the managing partner/owner for the Johnstown eatery, which specializes in market-fresh fish grilled over an oak-burning grill. A variety of eight species are received fresh daily and available on any given day.

Hand-cut beef and pork tenderloin, as well as pasta and chicken dishes also are a part of the menu.

The Spicy Pickle serves high quality meats and fine Italian Artisan breads along with a wide choice of 10 different cheeses, 21 different toppings, and 15 proprietary spreads to create panini and sub sandwiches with flavors from
around the world.
